I had the sweet opportunity recently to visit Carlo’s Bake Shop. While many of us know Carlo’s from TLC’s “Cake Boss” program or have heard about or been to one of their retail stores, our visit was a little different. One of my sisters, my niece, great nephew and I wanted to explore this option for a big birthday party. We did not visit the bakery in Hoboken but rather, behind the scenes in Jersey City, where their offices and serious baking facilities are located. My sister had emailed the bake shop requesting an appointment, and was truly impressed with how quickly they responded.
Upon arriving, our host was Ray and he could not have been more knowledgeable and welcoming. In helping us to select the perfect cake for our mother’s 80th birthday, Ray took a history. We knew we wanted to tap into mom’s childhood with a Boston-themed cake. We had some more specific ideas and Ray helped refine these in many ways. We also discussed cake shapes, layers, size, and even characters for on top of the cake that will be made out of modeling chocolate. Then we decided on flavors and frostings. It was a rough job but we were up to the task! Ray brought out a tray of all their cake options. The choices were extensive but not ridiculous. We tasted and loved everything, but focused in on one combination pretty quickly. As the party is not for months, we will wait to give away any more details.
Despite making thousands of special order cakes, Ray and his team made us feel that our project was special and unique. It was a great experience and we can’t wait to see the resulting creation and mom’s reaction!
